Ingredients:
For the Meatballs:
1 lb ground chicken ๐Ÿ—
1/2 cup ricotta cheese ๐Ÿง€
1/4 cup grated Parmesan ๐Ÿง€
1 egg ๐Ÿฅš
1/2 cup breadcrumbs ๐Ÿž
2 cloves garlic, minced ๐Ÿง„
Salt and pepper ๐Ÿง‚
1 tbsp Italian seasoning ๐ŸŒฟ
For the Spinach Alfredo Sauce:
2 tbsp butter ๐Ÿงˆ
1 clove garlic, minced ๐Ÿง„
1 cup heavy cream ๐Ÿฅ›
1/2 cup grated Parmesan ๐Ÿง€
2 cups fresh spinach ๐Ÿƒ
Salt and pepper ๐Ÿง‚
Additional:
Pasta, ready to serve ๐Ÿ
Directions:
Preheat oven to 400ยฐF (200ยฐC).
Combine meatball ingredients and form into small balls.
Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown.
For the sauce, melt butter over medium heat, add garlic and cook until fragrant. Add cream and Parmesan, simmer until thickened, then stir in spinach until wilted.
Serve pasta with meatballs and Alfredo sauce on top.
