Ingredients:
1. 4 large russet potatoes
2. 1 lb ground beef
3. 1 cup barbecue sauce
4. 1 tsp onion powder
5. 1 tsp garlic powder
6. ½ tsp salt
7. ½ tsp black pepper
8. 1 cup shredded cheddar cheese
9. 8 slices bacon, cooked and crumbled
10. ¼ cup sliced jalapeños (optional)
11. ¼ cup chopped green onions
Directions:
1. Preheat Oven: Preheat your oven to 400°F (200°C).
2. Bake Potatoes: Wash the potatoes, poke them with a fork, and bake for 45-50 minutes until they are tender.
3. Prepare Beef: In a skillet over medium heat, cook the ground beef with onion powder, garlic powder, salt, and pepper until it is browned. Drain any excess fat and mix in the barbecue sauce.
4. Cut Potatoes: Once the potatoes are baked, let them cool slightly. Then, slice each potato in half lengthwise and scoop out some flesh to create a volcano shape.
5. Fill Potatoes: Spoon the BBQ beef mixture into the potato halves, pressing it down slightly. Top with shredded cheddar cheese and crumbled bacon.
6. Bake Again: Place the filled potatoes back in the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
