Strawberry Shortcake Pound Cake Recipe

Ingredients:
For the Cake:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup buttermilk
1 package (3 oz) strawberry gelatin mix
1 cup chopped fresh strawberries
For the Glaze:
2 cups powdered sugar
3 tablespoons heavy cream (or milk)
1 teaspoon vanilla extract
For the Shortcake Crumble:
½ cup vanilla wafers, crushed
½ cup freeze-dried strawberries, crushed
2 tablespoons melted butter
Instructions:
Preheat & Prepare Pan
Preheat oven to 350°F (175°C).
Grease and flour a bundt pan.
Make the Cake Batter
Cream butter and sugar until fluffy.
Beat in eggs one at a time, then add vanilla.
In a separate bowl, whisk flour, baking powder, and salt.
Alternate adding dry ingredients and buttermilk into the batter.
Fold in strawberry gelatin and chopped strawberries.
Bake the Cake
Pour batter into the bundt pan.
Bake for 50-60 minutes or until a toothpick comes out clean.
Let cake cool before glazing.
Prepare the Glaze & Crumble
Whisk powdered sugar, cream, and vanilla until smooth.
Mix crushed wafers, freeze-dried strawberries, and melted butter for the crumble.
Assemble & Serve
Drizzle glaze over the cake.
Sprinkle the shortcake crumble on top.
