Savory Garlic-Ginger Beef with Tender Bokchoy Stir-Fry
Ingredients:
1 lb beef sirloin or flank steak, thinly sliced against the grain
1 tablespoon cornstarch
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
2 teaspoons sesame oil
3 tablespoons vegetable oil (divided)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
4 cups bok choy, chopped into large pieces
2 tablespoons water
Salt and pepper to taste
Cooked jasmine or white rice (optional, for serving)
Directions:
In a bowl, toss the sliced beef with cornstarch and 1 tablespoon soy sauce. Let marinate for 10–15 minutes.
Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Sear the beef in batches for 1–2 minutes per side until browned. Remove and set aside.
Add the remaining 1 tablespoon oil to the pan. Sauté garlic and ginger for 30 seconds until fragrant.
Add bokchoy and water. Stir-fry for 2–3 minutes until slightly wilted but still crisp.
Return beef to the pan. Add oyster sauce, hoisin sauce, sesame oil, and remaining soy sauce. Stir to coat everything evenly.
Cook for another 1–2 minutes until the sauce slightly thickens and everything is heated through.
Season with salt and pepper if needed. Serve hot with or without rice.
