Ingredients

1 lb breakfast sausage (pork, turkey, or spicy — your choice)

1 (8-count) can refrigerated biscuits (e.g., Pillsbury Grands, cut into quarters)

1 cup shredded cheddar cheese

4 oz cream cheese, softened

½ teaspoon garlic powder

½ teaspoon onion powder

2 tablespoons chopped chives or green onions (optional)

Cooking spray or butter (for greasing muffin tin)
Instructions
1. Preheat Oven
Preheat oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or butter.
2. Cook the Sausage
In a skillet over medium heat, cook sausage until browned and fully cooked, breaking it into crumbles. Drain excess fat and let cool slightly.
3. Mix the Filling
In a bowl, combine the cooked sausage, shredded cheddar, cream cheese, garlic powder, onion powder, and chives. Mix until well blended.
4. Assemble the Bites
Cut each biscuit into quarters. Flatten each piece slightly and press into the bottom and sides of the mini muffin cups to form a base. Spoon a heaping tablespoon of the sausage mixture into each cup.
5. Bake
Bake for 15–18 minutes, or until the biscuits are golden and the filling is bubbly. Let cool for a couple minutes before removing from the pan.
6. Serve
Serve warm. Great with hot sauce, honey mustard, or a drizzle of maple syrup!
