Pork Bones and Chicken Feet (Chinese soup Recipe)
Ingredients:
1 lb pork ribs
1 lb chicken feet
1 piece of ginger, sliced
3-4 green onions, chopped
2 tbsp rice wine
8-10 cups water
1 tsp white peppercorns
3-4 garlic cloves, crushed
1 ear of corn, cut into chunks
1 carrot, sliced
Salt to taste
Optional: goji berries, leafy greens
Instructions:
1. Blanch the meat:
In a large pot, bring water to a boil. Add the pork ribs, chicken feet, ginger, and green onions. Pour in the rice wine and let it boil for about 10 minutes.
2. Clean the meat:
Skim off any foam or impurities from the surface. Drain the meat and rinse thoroughly under cold water.
3. Start the soup:
In a clean pot, add the blanched pork ribs, white peppercorns, and garlic. Pour in 8-10 cups of water, ensuring the ingredients are covered. Bring the soup to a boil, then reduce the heat and simmer for 1 hour.
4. Add remaining ingredients:
Add the corn, chicken feet, and carrot. Cover and cook for another 20 minutes, or until the meat is tender.
5. Season and serve:
Add salt to taste. If using, add goji berries and leafy greens and let them cook for a few minutes. Serve the soup hot.
