One-Pan Spicy Garlic Lime Chicken Pasta
Ingredients:
1 lb chicken breast, cut into bite-sized pieces
8 oz spaghetti or linguine
3 cups chicken broth
2 tbsp olive oil
4 cloves garlic, minced
1 tsp red pepper flakes (adjust for spice)
Zest and juice of 1 lime
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh cilantro or parsley (optional, for garnish)
Directions:
In a large pan, heat olive oil over medium heat. Add chicken pieces and season with salt, pepper, and red pepper flakes. Cook until browned and cooked through, about 5-7 minutes.
Add minced garlic and cook for an additional minute until fragrant.
Pour in chicken broth, lime juice, and uncooked pasta. Bring to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
Stir in cherry tomatoes and lime zest, and cook for an additional 2-3 minutes.
Remove from heat, stir in Parmesan cheese until combined. Serve warm, garnished with cilantro or parsley if desired.
