One-Pan Bold Honey BBQ Chicken Rice

Ingredients:

• 1 lb boneless, skinless chicken thighs or breasts
• 1 cup long-grain rice
• 2 cups chicken broth
• ½ cup BBQ sauce (your preferred kind)
• ¼ cup honey
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp smoked paprika
• Salt and black pepper, to taste
• 1 cup mixed vegetables (fresh or frozen)
• Chopped green onions or parsley (optional, for garnish)

Instructions:

1. Sear the Chicken:
◦ Heat a large skillet over medium heat and add a drizzle of oil.
◦ Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
◦ Sear for 5-6 minutes per side until golden brown.
2. Prepare the Sauce:
◦ In a small bowl, mix together the BBQ sauce and honey.
◦ Pour this mixture over the seared chicken, coating it evenly.
3. Cook the Rice:
◦ Add the rice and chicken broth to the skillet.
◦ Stir everything gently, making sure the rice is submerged in liquid.
◦ Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes.
4. Add the Vegetables:
◦ In the last 5 minutes of cooking, add the mixed vegetables on top without stirring.
◦ Cover again and let them steam.
5. Final Touches & Serve:
◦ Once the rice is tender and the chicken is cooked through, fluff the rice with a fork.
◦ Garnish with chopped green onions or parsley if desired.
◦ Serve warm and enjoy!
