One-Pan Bold Honey BBQ Chicken Rice
Ingredients:
1 lb boneless, skinless chicken thighs or breasts
1 cup long-grain rice
2 cups chicken broth
1/2 cup BBQ sauce (your choice)
1/4 cup honey
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt and pepper to taste
1 cup mixed vegetables (frozen or fresh)
Chopped green onions or parsley (optional, for garnish)
Directions:
In a large skillet over medium heat, add the chicken and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for 5-6 minutes on each side until browned.
In a bowl, mix the BBQ sauce and honey. Pour over the seared chicken.
Add the rice and chicken broth to the skillet. Stir to combine, then bring to a boil.
Reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and the chicken is fully cooked through.
In the last 5 minutes of cooking, add the mixed vegetables on top (do not stir) and cover again.
Once done, fluff the rice and serve warm, garnished with chopped green onions or parsley if desired.
