

No-Bake Oreo Mint Cheesecake
This No-Bake Oreo Mint Cheesecake is a refreshing and creamy dessert, perfect for mint lovers. It features a crunchy Oreo crust, a smooth mint cheesecake filling, and is topped with more crushed Oreos for an extra indulgent treat!
Ingredients:
For the Crust:
24 Oreo cookies (crushed into fine crumbs)
6 tbsp unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp peppermint extract
1 ½ cups heavy whipping cream, cold
10-12 drops green food coloring (optional)
12 Oreo cookies, coarsely chopped
For the Topping:
Crushed Oreos and mint leaves for garnish (optional)
Instructions:
1. Prepare the Crust:
In a medium bowl, combine the crushed Oreos and melted butter until well mixed.
Press the mixture firmly into the bottom of a 9-inch springform pan, making an even layer.
Refrigerate the crust while you prepare the filling.
2. Make the Cheesecake Filling:
In a large bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and peppermint extract, and mix until well combined.
In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Add the green food coloring (if using) to give the cheesecake a minty hue. Fold in the chopped Oreo cookies.
3. Assemble the Cheesecake:
Spread the mint cheesecake filling evenly over the chilled Oreo crust. Smooth the top with a spatula.
Refrigerate the cheesecake for at least 4 hours or until fully set.
4. Decorate and Serve:
Before serving, garnish the top with crushed Oreos and mint leaves if desired.
