Mom’s Famous Cream Puffs

Ingredients
For the Cream Puffs:

1 stick (8 tablespoons) butter
1 cup water
1 teaspoon vanilla extract
4 eggs
1 cup all-purpose flour
For Mom’s Famous Filling:

1 pint heavy cream
1 package (3.4 ounces) instant vanilla pudding mix
⅓ cup milk
Instructions

Prepare the Cream Puff Dough:

In a medium saucepan, combine the butter, water, and vanilla extract. Bring to a boil over medium heat.
Reduce the heat to low and add the flour, stirring constantly until the mixture pulls away from the sides of the pot and forms a smooth ball.
Remove the saucepan from the heat and let the dough cool for a few minutes.
Incorporate the Eggs:

Using an electric mixer or a wooden spoon, beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough should become smooth and glossy.
Form the Puffs:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Drop the dough onto the baking sheet by tablespoons, spacing them evenly apart to allow room for expansion.
Bake the Puffs:

Bake for 25–30 minutes, or until the puffs are golden brown and firm. Avoid opening the oven during baking to prevent them from collapsing.
Remove the puffs from the oven and let them cool completely on a wire rack.
Make the Filling:

In a mixing bowl, combine the heavy cream, instant vanilla pudding mix, and milk.
Beat with a mixer on medium-high speed until the mixture thickens to a whipped cream consistency.
Assemble the Cream Puffs:

Slice each cooled puff in half horizontally. Pipe or scoop the filling into the bottom half of each puff, then replace the top.
Dust the assembled cream puffs with powdered sugar for a classic finishing touch.
