Ingredients:
– 1 lb chicken breast, thinly sliced
– 2 cups fresh mushrooms, sliced
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1 teaspoon paprika
– 1 cup chicken broth
– 1 cup sour cream
– Salt and pepper to taste
– 2 tablespoons all-purpose flour
– Fresh parsley, chopped for garnish
– Cooked egg noodles or rice, for serving
Directions:
1. Start by heating olive oil and butter in a large skillet over medium-high heat. Once hot, toss in the thinly sliced chicken and brown it on both sides. Once browned, remove the chicken and set it aside.
2. In that same skillet, add the finely chopped onion and minced garlic. Sauté until the onions become translucent and fragrant.
3. Next, add the sliced mushrooms to the pan. Cook them until they start to brown and release their delicious juices.
4. Sprinkle the flour over the mushrooms and give everything a good stir to combine. Let it cook for 1-2 minutes to toast the flour slightly.
5. Gradually pour in the chicken broth while stirring constantly to create a smooth, luscious sauce.
6. Now it’s time to return the chicken back into the skillet. Lower the heat and let everything simmer together for about 10 minutes.
7. Stir in the sour cream and paprika, seasoning with salt and pepper to your liking. Cook for another 5 minutes until the sauce thickens and the chicken is fully cooked.
