Ingredients:
– 2 tbsp olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 can (15 oz / 400g) chickpeas, drained and rinsed
– 1 cup (240 ml) coconut milk
– 1 cup (240 ml) vegetable broth
– 1/2 cup (75g) frozen peas
– 1/2 cup (75g) diced carrots
– 1/2 tsp dried thyme
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/2 cup (50g) breadcrumbs
– 1/4 cup (30g) nutritional yeast
Directions:
1. Preheat your oven to 375°F (190°C).
2. In a large pan, heat the olive oil over medium heat and sauté the diced onion until it’s soft and fragrant. Add in the minced garlic and cook for an additional minute.
3. Bring in the chickpeas, coconut milk, vegetable broth, peas, carrots, thyme, salt, and black pepper. Let everything simmer together for about 5 minutes to meld those lovely flavors.
4. Transfer this hearty mixture into a baking dish, spreading it out evenly.
5. In a small bowl, mix the breadcrumbs with nutritional yeast, then sprinkle this crunchy topping all over your casserole.
6. Bake in the preheated oven for 20 minutes, or until the top is golden brown and tempting.
