Ingredients:
4-6 sausages (Italian, bratwurst, or your favorite variety)
2 bell peppers (red and yellow), sliced
1 large onion, sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper to taste
4 large potatoes, peeled and cubed
1/4 cup milk (or cream for extra richness)
3 tbsp unsalted butter
Salt and pepper to taste
Optional garnish: chopped parsley
Directions:
Preheat your grill to medium-high heat.
Toss the sliced peppers and onions with olive oil, garlic powder, smoked paprika, salt, and black pepper. Grill them on a grill pan or directly on the grill grates, turning occasionally, until tender and slightly charred (about 8-10 minutes).
While the vegetables are grilling, place the sausages on the grill and cook, turning occasionally, until browned and cooked through (about 12-15 minutes).
Meanwhile, boil the potatoes in salted water for 15-20 minutes or until fork-tender. Drain and return them to the pot.
Mash the potatoes with milk, butter, salt, and pepper until smooth and creamy. Adjust seasonings as needed.
Serve the grilled sausages alongside the peppers and onions, with a generous helping of mashed potatoes. Garnish with chopped parsley if desired.
