Fried Chicken Legs with Creamy Mashed Potatoes

Ingredients:
For the Fried Chicken Legs:

6-8 chicken drumsticks
1 cup buttermilk (or 1 cup milk with 1 tbsp vinegar or lemon juice)
2 cups all-purpose flour
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper (optional, for heat)
1 tsp salt
1/2 tsp black pepper
Vegetable oil for frying
For the Mashed Potatoes:

4 large potatoes, peeled and cubed
1/2 cup heavy cream (or milk)
1/4 cup butter
1/4 cup sour cream (optional for creaminess)
Salt and black pepper, to taste
Instructions:
1. Prepare the Chicken:

Place the chicken drumsticks in a large bowl. Pour the buttermilk over the chicken, ensuring it is fully coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).
2. Prepare the Mashed Potatoes:

Place the potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
Drain the potatoes and return them to the pot. Add the butter, heavy cream, and sour cream. Mash until smooth. Season with salt and pepper to taste. Cover to keep warm.
3. Coat the Chicken:

In a shallow dish, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Remove the chicken from the buttermilk, letting excess drip off. Dredge each drumstick in the seasoned flour, ensuring it is evenly coated. Place on a wire rack and let rest for 10-15 minutes to help the coating stick.
4. Fry the Chicken:

Heat vegetable oil in a large, deep skillet or Dutch oven to 350°F (175°C). The oil should be about 2 inches deep.
Fry the chicken in batches, being careful not to overcrowd the pan. Cook for 12-15 minutes, turning occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
Remove and drain on paper towels.
5. Serve:

Plate the mashed potatoes and top with crispy fried chicken legs. Serve with your favorite gravy or a side of veggies for a complete meal.
This Fried Chicken Legs with Creamy Mashed Potatoes dish delivers crispy, juicy chicken paired with velvety mashed potatoes for the ultimate comfort meal.
