Egg Tofu Recipe with Minced Pork

Ingredients:

1 package egg tofu, cut into slices
1/4 lb ground pork
1/2 cup sliced mushrooms
1 tbsp minced ginger
2 cloves garlic, minced
1/4 cup chicken broth
1 tbsp soy sauce
1 tsp sugar
1/2 tsp sesame oil
1 tbsp cornstarch
2 tbsp water
Salt and pepper to taste
Green onions for garnish

Instructions:

Mix soy sauce, sugar, and sesame oil in a small bowl and set aside.

Prepare a cornstarch slurry by mixing cornstarch and water in another bowl and set aside.

Stir-fry mushrooms and ginger until the mushrooms turn lightly golden brown.

Add garlic and stir-fry until it begins to change color.
Add ground pork and break it into small pieces while stirring until it loses its pink color.

Add the sauce mixture and chicken broth, then simmer for a few minutes.

Gently add the sliced egg tofu and cook until heated through.

Pour in the cornstarch slurry to thicken the sauce, stirring gently.
Season with salt and pepper to taste.

Garnish with green onions and serve hot with rice.

Variations

For a spicier dish, add chili bean sauce or red pepper flakes.
Other types of tofu, such as firm or fried tofu, can be used, though soft tofu is traditional.
Ground beef, chicken, or turkey can be substituted for pork.
Some recipes include black beans for added flavor.
