A comforting and hearty soup featuring tender potatoes, seasoned ground beef, and a creamy, cheesy broth—all cooked effortlessly in your crockpot.
Ingredients (Serves 6–8)
Main Ingredients:
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
5–6 medium potatoes, peeled and diced
3 cups chicken or beef broth
1 cup shredded carrots
2 celery stalks, diced
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper, to taste
Creamy Additions:
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup sour cream
Optional Toppings:
4 slices bacon, cooked and crumbled
Chopped fresh parsley
Extra shredded cheese
Instructions:
Step 1: Prepare the Ground Beef
In a skillet, cook the ground beef over medium heat until browned.
Add the onion and garlic, and sauté until softened, about 2–3 minutes.
Drain excess fat and transfer the mixture to your crockpot.
Step 2: Assemble the Crockpot
Add the potatoes, carrots, and celery to the crockpot.
Sprinkle with smoked paprika, thyme, salt, and pepper.
Pour in the chicken or beef broth, ensuring the ingredients are submerged.
Step 3: Cook
Cover and cook on low for 6–8 hours or high for 3–4 hours, until the potatoes are tender.
Step 4: Add the Creamy Components
Once the soup is done cooking, stir in the heavy cream, cheddar cheese, and sour cream until well combined.
Let the soup warm through for another 15–20 minutes, stirring occasionally.
Step 5: Serve
Ladle the soup into bowls and top with bacon crumbles, extra cheddar cheese, and a sprinkle of parsley, if desired.
Serving Suggestions:
Serve with crusty bread, biscuits, or a side salad.
Add a dollop of hot sauce for a spicy kick!
Tips:
For a thicker soup, mash some of the cooked potatoes directly in the crockpot before adding the creamy ingredients.
Feel free to substitute ground turkey or sausage for the ground beef for a different flavor.
Enjoy the ultimate cozy meal with this creamy potato and hamburger soup! 🥣❤️
