Ingredients:
For the salmon:
– 4 salmon fillets, skinless
– 1/2 cup breadcrumbs
– 1/4 cup Parmesan cheese, grated
– 2 tablespoons fresh parsley, chopped
– 1 tablespoon olive oil
– 2 garlic cloves, minced
– 1 teaspoon lemon zest
– Salt and pepper to taste
For the lemon butter sauce:
– 1/4 cup unsalted butter
– 2 tablespoons lemon juice
– 1 garlic clove, minced
– 1 tablespoon fresh parsley, chopped
Directions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. In a bowl, mix breadcrumbs, Parmesan cheese, parsley, olive oil, minced garlic, lemon zest, salt, and pepper until well combined.
3. Place the salmon fillets on the baking sheet. Pat the breadcrumb mixture evenly onto the top of each fillet, pressing gently to form a crust.
4. Bake for 12-15 minutes or until the salmon is cooked through and the topping is golden and crispy.
5. While the salmon bakes, prepare the lemon butter sauce. Melt butter in a small saucepan over low heat. Stir in lemon juice, garlic, and parsley. Cook for 1-2 minutes, then remove from heat.
6. Drizzle the lemon butter sauce over the baked salmon and serve immediately.
