Ingredients:
2 tablespoons olive oil
1 lb boneless, skinless chicken breast, diced
Salt and pepper, to taste
4 cloves garlic, minced
1 small onion, diced
4 cups chicken broth
2 cups heavy cream
1 cup grated Parmesan cheese
8 oz fettuccine pasta, broken into smaller pieces
1/2 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
Fresh parsley, chopped (for garnish)
Directions:
Heat the olive oil in a large pot over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 7-8 minutes.
Add the minced garlic and diced onion to the pot. Cook for another 2-3 minutes until the garlic is fragrant and the onion softens.
Pour in the chicken broth and heavy cream, stirring to combine. Bring the soup to a simmer.
Add the broken fettuccine pasta, Italian seasoning, and garlic powder. Cook for about 10-12 minutes, or until the pasta is tender and the soup has thickened slightly.
Stir in the grated Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper as needed.
Garnish with fresh parsley before serving.
