Bone-in, skin-on chicken thighs 

Baby or Yukon gold potatoes, halved 

Olive oil 

Garlic (minced) 

Fresh parsley 

Paprika 

Dried rosemary and thyme

Instructions
Preheat oven to a high temperature. In a large bowl, coat chicken thighs and halved potatoes with olive oil, garlic, paprika, rosemary, thyme, salt, and pepper. Arrange everything in a large baking dish, skin side of the chicken facing up. Roast uncovered until the chicken skin is crisp and golden, and potatoes are tender and slightly caramelized. Garnish with chopped fresh parsley and serve hot with your favorite dipping sauce or steamed veggies!
Notes
Add lemon slices or zest to brighten the flavor. For extra crispy skin, broil for the last few minutes. Leftovers make a delicious lunch the next day!
