Ingredients:
1 cup dried cranberries
1 cup rolled oats
½ cup almond flour or ground almonds
½ cup shredded unsweetened coconut (plus extra for rolling)
¼ cup honey or maple syrup
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
Pinch of salt
Instructions:
Prepare the Mixture:
In a food processor, combine the dried cranberries, rolled oats, almond flour, shredded coconut, honey or maple syrup, coconut oil, vanilla extract, and salt. Pulse until the mixture is sticky and forms a dough-like consistency.
Shape the Energy Balls:
Scoop about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used.
Coat with Coconut:
Place the extra shredded coconut on a plate. Roll each energy ball in the coconut to coat it evenly.
Chill and Serve:
Arrange the coated energy balls on a plate or baking sheet and refrigerate for at least 30 minutes to firm up.
Once chilled, serve immediately or store in an airtight container in the refrigerator for up to a week.
Decoration Tips:
Serve the energy balls on a white plate to highlight their vibrant color and coconut coating.
Add a few whole cranberries and sprigs of mint around the plate for a festive look.
Place each ball in a mini cupcake liner for an elegant touch, especially if serving at a party.
