Cookie Monster Cheesecake

Ingredients:

Crust: 200g Oreo cookies (crushed), 1/4 cup melted butter
Cheesecake Filling: 500g cream cheese (softened), 3/4 cup sugar, 1/2 cup heavy cream, 2 large eggs, 1 teaspoon vanilla extract, 1/2 cup crushed Oreo cookies, 1/2 cup crushed chocolate chip cookies
Topping: Whipped cream, extra Oreo cookies, extra chocolate chip cookies, blue food coloring (optional for whipped cream)

Directions:

Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
For the crust, crush the Oreo cookies in a food processor until fine crumbs form. Combine the crumbs with melted butter and press them evenly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool.
For the filling, beat the softened cream cheese and sugar together in a large bowl until smooth. Add the heavy cream, eggs, and vanilla extract and continue mixing until well combined.
Gently fold in the crushed Oreo and chocolate chip cookies into the mixture.
Pour the cheesecake filling over the cooled crust and smooth the top.
Bake for 55-60 minutes, or until the center is just set. Turn off the oven, leaving the cheesecake inside for 1 hour before removing it to cool at room temperature.
Refrigerate for at least 4 hours or overnight to set.
For the topping, whip the cream until soft peaks form, and fold in blue food coloring (if desired). Spread the whipped cream over the cheesecake, and garnish with extra Oreo and chocolate chip cookies.
