Chocolate-Dipped Cookie Dough Bars

Ingredients:

  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips
  • 1 can sweetened condensed milk
  • 1 1/2 cups dark chocolate chips (or chocolate coating)
  • 1 tablespoon coconut oil
    Directions:
  1. In a bowl, whisk together the flour, baking soda, and salt.
  2. In a separate large bowl, using a mixer, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the vanilla extract and mix until well combined.
  4. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  5. Stir in the mini chocolate chips.
  6. Press the cookie dough into a lined 9×9 inch baking dish, spreading it evenly.
  7. Pour the sweetened condensed milk over the cookie dough, spreading it gently.
  8. Freeze for at least 2 hours, or until firm.
  9. Once set, remove from the dish and cut into bars.
  10. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together, stirring until smooth.
  11. Dip each bar into the melted chocolate, ensuring it’s completely coated, and place on a parchment-lined tray.
  12. Return the coated bars to the freezer for at least 30 minutes to set the chocolate.
