Chimichurri Grilled Steak 

Ingredients:

For the steak:
– 2 lbs steak (sirloin, ribeye, or flank)
– 1 tablespoon olive oil
– Salt and pepper to taste

For the chimichurri sauce:
– 1 cup fresh parsley, finely chopped
– 1/4 cup fresh cilantro, finely chopped (optional)
– 4 cloves garlic, minced
– 1 small red chili, finely chopped (optional, for heat)
– 1/4 cup red wine vinegar
– 1/2 cup olive oil
– 1 teaspoon dried oregano
– 1/2 teaspoon red pepper flakes
– Salt and black pepper to taste

Directions:
1. Prepare the chimichurri sauce: In a bowl, combine parsley, cilantro (if using), garlic, red chili, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and black pepper. Stir well and let sit for 15 minutes to allow the flavors to meld.
2. Preheat your grill or grill pan to medium-high heat.
3. Brush the steaks with olive oil and season generously with salt and pepper.
4. Grill the steaks for 4-5 minutes per side for medium-rare, or cook to your desired doneness. Remove from the grill and let rest for 5 minutes.
5. Slice the steak against the grain and drizzle generously with the chimichurri sauce. Serve immediately.
