Ingredients:
* 2 medium zucchinis
* 1 cup shredded cheese (mozzarella or any melty cheese)
* 1/4 cup all-purpose flour
* 1 large egg
* 2 tablespoons milk
* Salt and pepper to taste
* Olive oil, for frying
Instructions:
1. Slice the zucchini:
Cut the zucchini into thin, even rounds. Pair the slices up in sets of two that are close in size.
2. Fill with cheese:
Place a small pinch of shredded cheese between two slices of zucchini to make a sandwich. Press lightly to hold them together.
3. Prep coating:
In one shallow bowl, whisk together the egg and milk. In another, add the flour and season with a little salt and pepper.
4. Dredge the sandwiches:
Dip each zucchini sandwich first in flour, then in the egg mixture. Let any excess drip off.
5. Fry until golden:
Heat a thin layer of olive oil in a skillet over medium heat. Fry the zucchini sandwiches for 2–3 minutes per side, or until golden and the cheese inside is melted.
6. Serve:
Transfer to a plate lined with paper towels. Let cool slightly before serving warm.
Pro Tip:
Add a pinch of Italian herbs or garlic powder to the cheese for extra flavor. Serve with marinara or sour cream for dipping.
