Cheesy Beef Quesadillas
Ingredients:
For the Beef Filling:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning mix (or homemade taco seasoning)
½ cup water
Optional: ½ cup canned black beans or corn
For the Quesadillas:
8 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack)
2 tablespoons butter (for cooking)
Optional Toppings:
Sour cream
Salsa or pico de gallo
Guacamole
Chopped fresh cilantro
Instructions:
1. Prepare the Beef Filling:
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned.
Add the chopped onion and garlic to the skillet and sauté until softened, about 2–3 minutes.
Stir in the taco seasoning mix and water. Let it simmer for 3–5 minutes until the sauce thickens.
If using black beans or corn, stir them into the beef mixture and cook for another minute. Remove from heat.
2. Assemble the Quesadillas:
Lay a tortilla flat on a clean surface. Spread about ¼ cup of shredded cheese over one half of the tortilla.
Spoon 2–3 tablespoons of the beef mixture on top of the cheese.
Add another layer of cheese over the beef for extra cheesiness.
Fold the tortilla in half to create a half-moon shape. Repeat with remaining tortillas.
3. Cook the Quesadillas:
Heat a large skillet or griddle over medium heat and melt a small amount of butter.
Place the folded quesadilla into the skillet and cook for 2–3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Repeat with the remaining quesadillas, adding more butter as needed.
4. Serve:
Cut each quesadilla into wedges and serve warm with sour cream, salsa, guacamole, or your favorite toppings.
