Cajun Shrimp Pasta Recipe

Ingredients:

Homemade Cajun Seasoning (Approx. 4 tbsp):

3 teaspoons paprika
1 teaspoon salt
2 teaspoons garlic powder
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon cayenne pepper
1 teaspoon dried thyme
Pasta:

1 lb penne pasta (or your favorite variety)
1 lb shrimp (peeled and deveined)
1 tablespoon olive oil
2 tablespoons Cajun seasoning (divided)
3 tablespoons butter
3 garlic cloves, minced
14 oz can diced tomatoes
1 ½ cups heavy cream
½ cup Parmesan cheese, grated
Garnish:

Grated Parmesan cheese
Fresh parsley, chopped
Directions:

Boil pasta in salted water until al dente. Drain and set aside.
Coat shrimp with 1 tablespoon Cajun seasoning in a bowl.
Heat olive oil in a skillet and cook shrimp for 2-3 minutes per side. Remove and set aside.
Melt butter in the same skillet and sauté garlic until aromatic.
Add diced tomatoes, heavy cream, and the remaining Cajun seasoning, simmering until thickened.
Stir in Parmesan cheese until fully melted.
Return shrimp to the skillet and toss with the cooked pasta until well combined.
Top with Parmesan and parsley before serving.
