Ingredients:
1 lb beef, thinly sliced
1 bunch Shanghai greens (or bok choy), washed and cut into 2-inch pieces
2 cloves garlic, minced
1 tbsp ginger, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
1 tsp sugar
1/2 tsp white pepper
2 tbsp oil
Instructions:
Marinate the beef: In a bowl, combine the beef, soy sauce, cornstarch, sugar, and white pepper. Mix well and let marinate for 15-30 minutes.
Heat the wok: Heat 1 tbsp oil in a wok or large skillet over high heat.
Stir-fry the beef: Add the beef to the wok and stir-fry until browned. Remove and set aside.
Stir-fry the vegetables: Add the remaining oil to the wok and add the garlic and ginger. Stir-fry for 30 seconds, then add the bok choy. Stir-fry until the greens are wilted.
Combine: Return the beef to the wok and add the oyster sauce.
Stir-fry for another minute or two until heated through.
Serve: Serve hot with rice.
