Blueberry Lush Dessert
Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
For the cream cheese layer:
8 oz cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping (Cool Whip or homemade whipped cream)
For the pudding layer:
1 package (3.4 oz) instant vanilla pudding mix
1 ½ cups cold milk
For the blueberry topping:
1 can (21 oz) blueberry pie filling
For garnish (optional):
Extra whipped topping
Fresh blueberries
Directions:
Prepare the crust: In a mixing bowl, combine graham cracker crumbs with melted butter until evenly coated. Press the mixture firmly into the bottom of a 9×13-inch dish. Refrigerate while preparing the next layer.
Make the cream cheese layer: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Fold in whipped topping gently. Spread this layer over the crust.
Prepare the pudding layer: In another bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until thickened. Spread over the cream cheese layer.
Add the blueberry topping: Evenly spoon the blueberry pie filling over the pudding layer, spreading it out smoothly
Chill & serve: Refrigerate for at least 4 hours (or overnight) to allow the layers to set. Before serving, top with additional whipped cream and fresh blueberries, if desired.
