Ingredients
For the Crust:
1 cup graham cracker crumbs
2 tbsp granulated sugar
4 tbsp unsalted butter, melted
For the Cheesecake Filling:
8 oz cream cheese, softened
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
2 tbsp sour cream
For the Berry Swirl:
½ cup mixed berries (strawberries, blueberries, or raspberries)
2 tbsp granulated sugar
1 tsp lemon juice
Instructions
Step 1: Prepare the Berry Swirl
In a small saucepan over medium heat, combine the berries, sugar, and lemon juice.
Cook until the berries break down and the mixture thickens slightly (about 5 minutes).
Strain the mixture through a fine mesh sieve to remove seeds, then let it cool completely.
Step 2: Make the Crust
Preheat your oven to 325°F (160°C) and line a mini muffin pan with paper liners or grease it well.
In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
Press about 1 tsp of the crust mixture into the bottom of each muffin cup.
Bake for 5 minutes, then set aside to cool.
Step 3: Cheesecake Filling
In a mixing bowl, beat the cream cheese and sugar until smooth and creamy.
Mix in the egg, vanilla extract, and sour cream, blending until combined.
Step 4: Assemble the Cheesecake Bites
Spoon the cheesecake filling over the cooled crusts, filling each cup almost to the top.
Add small dollops of the cooled berry swirl mixture on top of the cheesecake filling.
Use a toothpick or skewer to gently swirl the berry puree into the cheesecake for a marbled effect.
Step 5: Bake
Bake the cheesecake bites for 12–15 minutes, or until the centers are just set.
Allow them to cool to room temperature, then chill in the refrigerator for at least 2 hours before serving.
