Asparagus Tomato Salad with Burrata Cheese

Ingredients:

1 lb asparagus (trimmed)

1 cup cherry tomatoes (halved)

8 oz burrata cheese

2 tbsp olive oil

1 tbsp balsamic glaze

Salt & black pepper (to taste)

1/4 cup fresh basil leaves (torn)

Instructions:

Bring a pot of salted water to a boil. Blanch asparagus for 2-3 minutes, then transfer to an ice bath to cool. Drain and set aside.

In a large bowl, combine blanched asparagus and cherry tomatoes.

Drizzle olive oil over the veggies and season with salt and black pepper. Toss gently to coat.

Transfer the mixture to a serving platter.

Place the burrata cheese on top of the salad.

Drizzle balsamic glaze over the salad and top with fresh basil leaves.
