Adobong Pusit (Squid Adobo) Recipe

Here’s another classic Filipino recipe that will rock your taste buds- Adobong Pusit! It is an adobo variation that uses squid and incorporates its ink into the savory adobo sauce. A definite must-try!

Ingredients:

1 lb squid, cleaned and cut into rings
1/4 cup cooking oil
1 onion, chopped
3 cloves garlic, minced
1 tomato, chopped
1/4 cup vinegar
1/4 cup soy sauce
1 bay leaf
1 teaspoon black peppercorns
Salt to taste
Water (if needed)
Squid ink (optional, for a darker sauce)

Instructions:

Sauté: In a pot or pan, heat the cooking oil over medium heat. Sauté the garlic, onion, and tomato until fragrant.
Add squid: Add the squid and cook for 2-3 minutes until it turns opaque.
Add seasonings: Add the soy sauce, vinegar, bay leaf, peppercorns, and salt. If desired, add the squid ink for a darker sauce.
Simmer: Add a little water if needed, and bring to a simmer. Cook for 15-20 minutes, or until the squid is tender and the sauce has slightly thickened.
Serve: Remove the bay leaf and serve hot with rice.
