Grilled Peach Blueberry Salad
**Ingredients:
– 4 ripe peaches (halved and pitted)
– 1 cup fresh blueberries
– 4 cups mixed greens
– 1/4 cup pecans or walnuts (toasted)
– 1/4 cup feta cheese (crumbled)
– 1/4 cup olive oil
– 2 tbsp balsamic vinegar
– 1 tbsp honey
– 1 tsp Dijon mustard
– Salt and pepper, to taste
**Directions:
1. Prepare Peaches: Preheat grill or grill pan over medium heat. Lightly brush peach halves with olive oil.
2. Grill Peaches: Place peaches cut-side down and grill for 2–3 minutes until grill marks appear. Remove and slice.
3. Make Dressing: In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, remaining olive oil, salt, and pepper.
4. Assemble Salad: In a large bowl or platter, arrange mixed greens. Top with grilled peach slices, blueberries, toasted nuts, and crumbled feta.
5. Dress and Serve: Drizzle the dressing over the salad just before serving.
