The “Disappearing Chicken” is a flavorful, easy-to-make dish that combines chicken with a creamy sauce and cheese, creating a delightful meal that your family will love. Perfect for weeknight dinners, this recipe is simple and requires minimal prep time.
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
Salt and pepper (to taste)
1 tablespoon olive oil
For the Sauce:
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese (plus more for topping)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika (optional)

Fresh parsley or chives (chopped, optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat.
Add the chicken breasts to the skillet and sear them for about 5-6 minutes on each side until they are golden brown. They don’t need to be fully cooked at this stage, as they will finish cooking in the oven.
Make the Sauce:
In a mixing bowl, combine the cream of chicken soup, sour cream, shredded cheddar cheese, garlic powder, onion powder, and paprika. Mix well until smooth.
Combine Chicken and Sauce:
Once the chicken is browned, pour the sauce over the chicken in the skillet, ensuring that each piece is well-coated.
If you don’t have an oven-safe skillet, transfer the chicken and sauce to a greased baking dish.
Bake the Chicken:
Cover the skillet or baking dish with aluminum foil and place it in the preheated oven.
Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
Add Extra Cheese:
Remove the foil and sprinkle some additional shredded cheddar cheese on top of the chicken.
Return to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is bubbly and golden.
Serve:
Remove from the oven and let it rest for a few minutes.
Garnish with chopped parsley or chives if desired.
