Ingredients:
3 large turkey wings, split at the joints, tips removed
2 cups buttermilk
2 cups all-purpose flour
1/2 cup cornstarch (for extra crispiness)
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp cayenne pepper (adjust for heat preference)
1 tsp black pepper
1 tsp salt (plus more for seasoning)
1 tsp smoked paprika (optional)
1 tsp dried thyme or parsley
1/2 tsp baking powder (for extra crunch)
Oil for frying (vegetable or peanut oil)
For the Spicy Dipping Sauce (Optional):
1/2 cup hot sauce
2 tbsp melted butter
1 tsp honey (optional)
1/2 tsp garlic powder
Instructions:
Marinate the Turkey Wings

Place the turkey wings in a large bowl and pour buttermilk over them.
Let them marinate for at least 4 hours, preferably overnight for extra tenderness.
Prepare the Breading

In a separate bowl, mix flour, cornstarch, baking powder, and all seasonings.
Coat the Wings

Remove the turkey wings from the buttermilk and shake off the excess.
Dredge them in the seasoned flour mixture, pressing firmly to coat.
Let them sit for 10 minutes to allow the coating to adhere.
Fry the Wings

Heat oil in a deep fryer or heavy pot to 350Β°F (175Β°C).
Fry the wings in batches for 12-15 minutes, or until golden brown and crispy.
Drain on a wire rack or paper towel.
Make the Sauce (Optional)

In a small bowl, mix hot sauce, melted butter, honey, and garlic powder.
Drizzle over the wings or serve as a dipping sauce.
