Avocado Egg Salad

Ingredients:
• 4 hard-boiled eggs, peeled and chopped in half
• 1 ripe avocado, diced
• Juice of 1/2 lemon
• Salt, to taste
• Freshly ground pepper, to taste
• Fresh parsley or chives, chopped (for garnish)
• 1 small red onion, finely chopped

Instructions:
1. Prepare the Eggs:
o Hard-boil the eggs by placing them in a pot of water, bringing it to a boil, then reducing the heat and simmering for 10-12 minutes. Once cooked, peel the eggs and chop them into halves or smaller pieces, depending on your preference.
2. Mash the Avocado:
o Dice the avocado and place it in a bowl. Gently mash it with a fork until it reaches a creamy consistency, leaving some chunks for texture.
3. Combine Ingredients:
o Add the chopped eggs, diced avocado, and chopped red onion to a bowl.
4. Season the Salad:
o Drizzle the lemon juice over the mixture and season with salt and pepper to taste. Stir gently to combine.
5. Garnish & Serve:
o Garnish with freshly chopped parsley or chives for a fresh flavor.
