Brownie Cookies

Ingredients:

1 cup semi-sweet chocolate chips
½ cup unsalted butter
¾ cup granulated sugar
¼ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
¾ cup all-purpose flour
¼ cup unsweetened cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
½ cup additional chocolate chips (for mixing in)

Directions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Melt 1 cup of chocolate chips with butter in a microwave-safe bowl, stirring until smooth. Let cool slightly.
In a large bowl, whisk together sugars, eggs, and vanilla until light and fluffy.
Stir in the melted chocolate mixture until fully combined.
Sift in flour, cocoa powder, baking powder, and salt. Mix until just combined.
Fold in the remaining ½ cup of chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 10-12 minutes, until edges are set but centers remain soft.
Let cookies cool for 5 minutes before transferring to a wire rack.

Tips:
