These Slow Cooker Cuban Sandwiches are the ultimate comfort food! Tender pork, melted cheese, and crispy bread come together for perfection.
Ingredients:
– 4-5 lbs. pork shoulder or butt roast
– Juice from 2 oranges
– Juice from 2 limes
– 4 cloves garlic, minced
– 1 Tbsp. cumin
– 1 Tbsp. dried oregano
– 1 tsp. cayenne pepper
– 1 tsp. kosher salt
– 1 tsp. black pepper
– 2 Cuban bread loaves or Italian bread loaves
– 4 Tbsp. unsalted butter, softened
– 1/2 lb. sliced swiss cheese
– 1/2 lb. sliced deli ham
– 12 sandwich pickles, sliced lengthwise
– Yellow mustard
Directions:
For the Pork: In a bowl, mix together the orange juice, lime juice, minced garlic, cumin, oregano, cayenne pepper, kosher salt, and black pepper. Place your pork in the slow cooker with the fat side facing up, and pour the marinade over it. Let it cook on low for 8-10 hours until it’s tender and shreds easily. After cooking, shred the pork and return it to the cooker to soak up all those delicious juices.
For the Cubans: Preheat your panini press or cast iron skillet. Trim the ends off your loaves of bread and slice them horizontally. Spread the softened butter on the outside of each slice, and slather the inside with yellow mustard. Layer on the swiss cheese, ham, shredded pork, pickles, and a final slice of swiss cheese. Grill those beauties in the press for about 3-5 minutes, or in the skillet for 2-3 minutes per side until golden brown and crispy. Slice the sandwiches in half and serve them warm.
