S’mores Stuffed Brownie Bites with Gooey Marshmallow Centers

Ingredients:
– 200g dark chocolate
– 120g unsalted butter
– 150g flour
– 200g sugar
– 3 large eggs
– 150g crushed graham crackers
– 1/4 tsp salt
– 12 large marshmallows
– 1 tsp vanilla extract

1. Preheat your oven to 175°C (350°F). Line a mini muffin tin with paper cases or grease thoroughly to prevent sticking.
2. In a heatproof bowl set over simmering water, melt together the dark chocolate and butter, stirring occasionally until smooth. Remove from heat and let cool slightly.
3. In a separate bowl, whisk together sugar and eggs until light and fluffy. Add the vanilla extract, then slowly blend in the melted chocolate mixture until well combined.
4. Gently fold in the flour, crushed graham crackers, and salt until just mixed. Be careful not to over-mix to retain a light texture.
5. Spoon a small amount of the brownie batter into each muffin cup, pressing a marshmallow into the center of each, then cover with additional batter until the marshmallow is fully encased.
6. Bake in the preheated oven for 15-18 minutes, or until the tops are set and a little cracked.
7. Let cool in the pan for a few minutes before transferring to a wire rack. Serve warm for the ultimate gooey marshmallow experience, or at room temperature where they become the perfect hand-held treat.
