Blueberry, Feta, and Honey-Caramelized Onion Naan Pizza

Ingredients:
• 2 naan flatbreads
• 1 teaspoon olive oil
• 1 cup thinly sliced red onion
• Kosher salt
• Pinch of red pepper flakes
• 2 tablespoons honey
• ½ cup ricotta cheese
• ½ cup feta cheese
• 1 cup blueberries
• Micro arugula or regular baby arugula

Instructions:
1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange the naan on the baking sheet and lightly brush or spray with water. Set aside.
2. Caramelize the Onions: In a pan, heat olive oil over medium-low heat. Add the sliced red onion and season with a pinch of salt and red pepper flakes. Cook for about 3-5 minutes, then stir in honey and let the onions caramelize. Remove from heat.
3. Prepare the Cheese Mixture: In a small bowl, combine ricotta and feta cheeses. Spread the cheese mixture evenly over the naan.

5. Bake: Bake the naan pizzas in the oven for about 10 minutes or until the cheese has softened, the blueberries are nearly bursting, and the naan is toasted.
6. Finish and Serve: Remove from the oven, sprinkle with fresh arugula, and serve immediately.
