Super Moist Chocolate Cake with Perfect Chocolate Ganache

Ingredients:
For the Chocolate Cake:

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup hot water (or hot coffee for a richer flavor)
For the Chocolate Ganache:

8 oz semisweet or bittersweet chocolate (chopped)

1 cup heavy cream

2 tbsp unsalted butter (optional, for extra shine)

Instructions:

Make the Chocolate Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In a separate bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients and mix until smooth.
Slowly add the hot water (or hot coffee) and stir until combined. The batter will be thin, but that’s okay — it helps create a super moist cake.
Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.

Make the Chocolate Ganache:
In a heatproof bowl, chop the chocolate into small pieces.
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (don’t let it boil).
Pour the hot cream over the chopped chocolate and let it sit for a minute or two. Stir gently until the chocolate is completely melted and smooth.
If you want a shinier ganache, add butter and stir until combined. Let the ganache cool slightly before using.

Assemble the Cake:
Once the cakes are completely cooled, place one layer on a serving plate.
Pour a generous amount of ganache over the top and spread it evenly. Place the second layer of cake on top and pour the remaining ganache over the entire cake, allowing it to drip down the sides for a beautiful effect.

Decorate (Optional):
You can top the cake with chocolate shavings, sprinkles, or fresh berries to add a personal touch.
