Peanut Butter Cup Stuffed Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 cup chocolate chips
12 peanut butter cups
Instructions:
Prepare the Dough:
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Mix the Dry Ingredients:
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until fully combined. Fold in the chocolate chips.
Stuff the Cookies:
Scoop about 2 tablespoons of dough and flatten it slightly. Place a peanut butter cup in the center and cover it with another scoop of dough, sealing the edges to fully enclose the candy. Repeat with the remaining dough.
Bake:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and place the stuffed cookies on the sheet, spacing them 2 inches apart. Bake for 12-14 minutes, or until golden brown.
Cool and Serve:
