Brown Sugar Bacon Wrapped Pork Tenderloin
Ingredients:
1 (2 lb) pork tenderloin
10-12 slices of bacon
1/3 cup brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Directions:
Preheat your oven to 400°F (200°C).
In a small bowl, mix together brown sugar, smoked paprika, garlic powder, salt, and pepper.
Lay the bacon slices on a flat surface, slightly overlapping them. Sprinkle half of the brown sugar mixture evenly over the bacon.
Place the pork tenderloin on top of the bacon and roll it up, using the bacon to completely encase the pork. Tuck in the ends of the bacon as you roll to secure them.
Heat olive oil in an ovenproof skillet over medium-high heat. Once hot, add the bacon-wrapped tenderloin and sear until all sides are golden brown, about 2-3 minutes per side.
Sprinkle the remaining brown sugar mixture over the seared tenderloin.
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until a thermometer inserted into the thickest part of the tenderloin reads 145°F (63°C).
Remove from the oven and let rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat.
Slice and serve the tenderloin, ensuring each piece has a portion of the caramelized bacon wrap. Serve with roasted vegetables or a fresh salad.
