Ingredients:
1 package of chow mein noodles
2 eggs
1 tablespoon soy sauce
Vegetable oil for frying
1 onion, sliced
2 cloves garlic, minced
1 cup chopped vegetables (carrots, bell peppers, cabbage, etc.)
1/4 cup soy sauce
2 tablespoons oyster sauce
1 teaspoon sesame oil
Salt and pepper to taste
Instructions:
Prepare the noodles: Cook the chow mein noodles according to package instructions. Drain and set aside.
Scramble the eggs: Whisk the eggs in a bowl and scramble them in a hot pan with a little oil. Remove from the pan and set aside.
Stir-fry the vegetables: Add more oil to the pan if needed. Add the onion and garlic and cook until fragrant. Add the vegetables and cook until tender-crisp.
Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
Combine everything: Add the noodles, scramble eggs and sauce to the pan with vegetables. Stir-fry until heated through.
Season and serve: Add salt and pepper to taste. Serve hot.
Variations:
Add protein: Include chicken, shrimp, or beef.
Use different vegetables: Experiment with bok choy, snow peas, or mushrooms.
