Cheesy Garlic Shrimp Grilled Sandwich

8 slices sourdough bread
1/2 lb shrimp (peeled, deveined, chopped)
2 tbsp butter (plus extra for grilling)
2 cloves garlic (minced)
1 tbsp fresh parsley (chopped)
1 small red chili (finely diced, optional)
1 1/2 cups mozzarella cheese (shredded)
1 cup sharp cheddar cheese (shredded)
Salt & pepper (to taste)



In a skillet, melt butter, add garlic, and sauté until fragrant for a flavor-packed base. Stir in shrimp, parsley, and chili, cooking 2–3 minutes until pink for a juicy seafood burst.
