Ingredients:
* 1 lb ground beef (80/20)
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* 3 oz cheddar cheese, cut into 12 cubes
* 6 slices of bacon, halved (12 pieces total)
* 1/2 cup BBQ sauce
Instructions:
1. Preheat oven:
Set your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
2. Prepare meat mixture:
In a bowl, combine ground beef with salt, pepper, garlic powder, and onion powder. Mix until just combined.
3. Assemble the bombs:
Flatten a tablespoon-sized amount of meat in your palm. Place a cube of cheddar in the center and form the meat around it to seal.
4. Wrap with bacon:
Wrap each meatball with a half slice of bacon and secure the seam side down.
5. Bake:
Place bombs on the wire rack and bake for 20 minutes. Brush with BBQ sauce and bake another 10 minutes, or until bacon is crispy and sauce is sticky.
6. Serve:
Let rest for 5 minutes before serving.
