Marry Me Salmon Recipe

Ingredients

For the Salmon:
• 4 salmon fillets (6 oz each, skinless or with skin)
• 2 Tbsp olive oil
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 tsp smoked paprika
• Salt & pepper to taste
For the Sauce:
• 2 Tbsp unsalted butter
• 3-4 garlic cloves, minced
• 1 cup heavy cream
• 1/3 cup chicken broth (or vegetable broth)
• 1/2 cup grated Parmesan cheese
• 1/2 tsp chili flakes (optional, for heat)
• 1/2 cup sun-dried tomatoes, chopped
• 1 tsp dried basil (or Italian seasoning)
• 1/2 cup fresh spinach, chopped
• Salt & pepper to taste

Instructions

1. Prep the Salmon: Pat the salmon fillets dry. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.
2. Cook the Salmon: Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for about 3-4 minutes per side until golden and cooked to your desired doneness. Remove and set aside.
3. Make the Sauce: In the same skillet, melt the butter. Add minced garlic and sauté until fragrant (about 1 minute). Stir in the heavy cream, chicken broth, and Parmesan cheese. Mix well until the cheese is melted and the sauce thickens slightly.
4. Add Flavor: Stir in chili flakes (if using), sun-dried tomatoes, and dried basil. Simmer for 2-3 minutes.
5. Combine & Finish: Add the fresh spinach and stir until wilted. Return the salmon fillets to the skillet, spoon the creamy sauce over the salmon, and let everything simmer for 2 minutes to combine the flavors.
6. Serve: Garnish with fresh basil or parsley if desired. Serve warm with rice, mashed potatoes, or pasta for a perfect meal!
