Crab and Shrimp Stuffed Salmon

Ingredients:
4 salmon fillets (6 oz each)
1/2 cup cooked shrimp, chopped
1/2 cup lump crab meat
2 tablespoons mayonnaise
2 tablespoons cream cheese, softened
1 teaspoon Dijon mustard
1 teaspoon Old Bay seasoning
2 tablespoons chopped green onions
1 tablespoon chopped fresh parsley
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon lemon juice
1 tablespoon olive oil

Directions:
Preheat the oven to 375°F (190°C).
In a medium bowl, combine shrimp, crab meat, mayonnaise, cream cheese, Dijon mustard, Old Bay seasoning, green onions, parsley, garlic powder, lemon juice, salt, and pepper. Mix well.
Pat the salmon fillets dry with a paper towel. Using a sharp knife, cut a slit in the side of each fillet to create a pocket without cutting all the way through.
Stuff each salmon fillet generously with the crab and shrimp mixture.
Place the stuffed fillets on a lightly greased baking sheet or baking dish.
Drizzle olive oil over the salmon and season lightly with salt and pepper.
Bake for 18 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve hot with your favorite sides and a fresh squeeze of lemon.
