Sweet Roasted Strawberry Ricotta Toast

INGREDIENTS:

  • 1 cup strawberries, hulled and halved
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 cup ricotta cheese
  • 2 slices of bread (sourdough or your choice)
  • Salt and pepper to taste
  • Fresh mint or basil leaves for garnish (optional)

INSTRUCTIONS:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the halved strawberries in olive oil and arrange them on a baking sheet. Roast for about 20 minutes, or until soft and slightly caramelized.
  3. While the strawberries are roasting, toast your bread slices until golden brown.
  4. In a separate bowl, whisk the ricotta cheese until smooth. Mix in the honey, salt, and pepper to taste.
  5. Once the bread is toasted, generously spread the whipped ricotta on each slice.
  6. Layer the roasted strawberries over the ricotta-covered toast.
  7. If desired, garnish with fresh mint or basil leaves for extra flavor.
  8. Serve and enjoy your delightful breakfast or snack!
