Tender French Onion Meatloaf with Gooey Swiss Cheese
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 packet French onion soup mix
1 onion, thinly sliced
2 tbsp olive oil
1 cup shredded Swiss cheese
Salt and pepper to taste
Directions:
For the onions: In a skillet, heat olive oil over medium heat and sauté the sliced onions until golden brown and caramelized, about 10 minutes.
In a bowl, combine ground beef, breadcrumbs, milk, egg, soup mix, salt, and pepper. Mix well and form into a loaf shape.
Place the meatloaf in the crockpot and top with the caramelized onions. Cover and cook on low for 6-7 hours.
About 10 minutes before serving, sprinkle the Swiss cheese over the meatloaf and let it melt.
Slice and serve with your favorite side.
